Paleo Friendly/Healthy AllSport CrossFit Folks –

On Monday, 11 June 2012, we will have Stone Table Foods ( bringing you some tasty samples post WOD. Come WOD, and be ready to sample some delicious Paleo, Gluten Free Food. Stone Table Foods will be there around 4:30 p.m. to prepare their tasty goods so come WOD at 5:00 p.m. and be ready to replenish with some awesome food! I’m sure they will stick around for after the 6:00 p.m. WOD too, so please get registered for your classes and be HUNGRY.

Stone Table Foods will also be matching the $250 we raised on Saturday for CrossFit For Hope!!! How SUPER COOL is that?

Some background about the owner, Bill:

I’ve been a lifelong athlete, a professional chef, and I’ve worked in many sectors of healthcare. All of that has led me to make a few observations and identify some real needs. In your position I know you’re well aware of the challenges we face in terms of helping people lead healthier lives. I’ve been in a position to see firsthand the effects of obesity and chronic disease. I’ve come to understand that the only people we can help are those who choose to help themselves. I’m trying to do that by giving them realfood from responsible farmers and purveyors that has been thoughtfully and tastefully prepared.

Our sourcing philosophy is one important area where differ from existing meal providers. We buy our grass fed beef, pastured pork and poultry from Yonder Way Farm. We receive truly “wild game” meats harvested on 100,000 acres by Broken Arrow Ranch, the same purveyor we used when I cooked at Brennan’s of Houston. We’ll be getting lamb from Loncito’s Lamb in Austin this summer and fall when they harvest. Our seafood comes from reputable wholesalers in Seabrook, and I buy only whole fish so I can personally evaluate them for freshness. Our produce comes mostly from farmer’s markets and CSA growers. Some items (like cauliflower) that we use as textural elements to replace rice and grains are impossible to grow in the region given the heat and growing conditions, so we buy commercial organics in that instance.

Another way we’re different is our preparation. Once we have an idea what produce and meat is fresh and available, we develop a new menu each week. We have only trained professional chefs preparing our meals. Once prepared we place the meals into BPA-Free trays that can safely be heated in an oven or microwave, with or without thawing. The meals are also sealed in a commercial grade vacuum sealer to maintain freshness prior to flash freezing.

Our meals are all compliant with the Paleo and Primal diet methodologies. They are also 100% gluten-free and dairy free. We’ve had a lot of interest among Paleo Challenge participants. We have about equal numbers of orders from individuals who cook for one and from families that buy for 2 to 4 people. Most of our clients are seeking Paleo, but we have some who just love the food and are pleasantly surprised that they don’t miss the grains or dairy. And now that we’ve been at this a while those people are happy to report they’re losing weight, even those who don’t exercise regularly. Even better are the anecdotal reports from Crossfit members and coaches that not only love the food, but they can appreciate a difference in their performance and the way they feel.

We are licensed by the state, insured, we are cooking in a commercial kitchen, we are permitted and inspected by the health department, and I feed these meals to my wife and three kids.
